Egg Recipes
Egg recipes are not that common in the grand scheme of Indian cooking. They are largely overlooked by Indian restaurants and not even in particular abundance in Indian recipe books.
Part of the reason for this is that the Hindu dietary codes would class eggs as tamasic (i.e. impure). A good many Hindus are lacto-vegetarian and will not eat eggs whilst Muslim do consider eggs to be Halal (lawful).
Whatever the religious standpoints, eggs are commonly eaten in the west and they are certainly eaten in parts of India. They are an extremely nutritious food with lots of protein, vitamins and minerals.
They are good for snacks - egg pakoras are really yummy, and of course they can be curried to make a main meal. (I used to do this as a teenager - hard boil some eggs and simply pour over some curry sauce out of a jar - not very Indian but tasty and nutritious)
When I was working in South Africa we used to play squash quite a bit and had this ritual of having a particular meal about an hour before playing. It was aloo anda a sort of Indian potato omelette - not too heavy but with lots of carbs for energy and lots of protein. (Actually I think it was just that everybody really liked it so all that dietary stuff was justification really)
