Indian Potato Recipes
Indian potato recipes are pretty plentiful and some of them are very well known and popular in the West - who hasn't had Bombay Aloo in an Indian restaurant?
The potato (aloo) may be a mishapen, boring looking lump of carbohydrate but it is a useful staple food for a great deal of the West, and is possibly the most popular non-cereal vegetable in the world. It is not a great favourite with the health food mob because it is a bit carb heavy, but it has lots of vitamins C and B6 and with potassium and fibre it's not nearly as black as it's painted.
The potato is used as an additional ingredient in many dishes to give it bulk and food value; it's a vegetable that will absorb the flavours you put with it so it can be used to make really tasty dishes. It is extremely versatile and can be cooked in numerous ways - boiled, roasted, fried, steamed and it can be eaten whole or mashed or anywhere in between.
There are Indian potato recipes for starters, salads, snacks, side
dishes and even main dishes where the potato is the star of the show..
