Rice Recipes

Rice is one of the staple foods of India and of course there are rice recipes aplenty.

Although rice tends to be thought of as an accompaniment in the west, in India it is eaten at all times of the day, for breakfast, lunch and dinner. For example for breakfast, rice is ground with lentils to make batter for dosas and idlis.

It is of course used as a compliment to main dishes and is eaten with lentils throughout India but there are also a large number of recipes where rice is an important ingredient in its own right. Probably most famous in the West is biryani where rice is cooked together with meat or fish or vegetables.

Another similar dish is pilau (or pilav, pilaf, pilo and a number of other things). This dish is very old and has variants all over the Middle East and Asia. (There is a variant from Uzbekistan and Russia called plov with lamb and carrots which is superb). This is often cooked slowly in a sealed pot, either on a hob or an oven.

As the Chinese prepare rice with prawns, chicken etc., so there are many Indian rice recipes with interesting ingredients such as peas, prawns or fried onions

Khichdi (and its other spellings) is a dish of rice and lentils regarded as a great comfort food, it is prepared all across northern India and Pakistan and further south there are variants of this which add vegetables or even prawns. This is the dish which was probably the inspiration for the great Anglo-Indian breakfast dish of Kedgeree - rice, smoked fish, eggs and butter.
